You can just use bootcamp to add a bootable windows partition and install any flavor of windows. The apple install disk has all the drivers required in a nice little installable. I set up my work macbook quadruple booting into OS X Tiger, OS X Leopard, OS X Snow Leopard, and Windows XP, and my mac pro has Snow Leopard and Windows 7 64 bit installed.
